While you’re waiting

As I have no idea what to post right now, I thought I’d share a recipe I’d found last year and haven’t had the courage to try yet. So, if there’s any brave non-diabetics out there who want to and tell me how they are, that’d be sweet 😉 …

I found the following in the Province Newspaper on

Tuesday November 18, 2008 by-line Barbara Barnes

“from the new ACTO Blue Flame Holiday Collection”

Crispy Mallow Brownies

Makes 36

1 lb package brownie mix

2 cups miniature marshmallows

1 1/2 cups semi-sweet chocolate chips

1 cup peanut butter

1 tbsp. butter

1 1/2 cups crisp rice cereal

Line a 9″ square baking pan with non-stick foil or parchment paper, leaving a two inch overhang.

Prepare and bake brownie mix according to package directions.

Do Not Overbake.

Remove pan from oven and sprinkle brownies with marshmallows.

Continue baking for 5 mins or until marshmallows are melted. Cool in pan on rack.

Meanwhile, combine chocolate chips, peanut butter and butter in a large saucepan. Cook over low heat, stirring frequently until chocolate chips are melted and mixture is smooth. Remove from heat. Stir in cereal. Spread chocolate mixture over marshmallow layer. Refrigerate until chocolate mixture is set.

Using foil as an aid, lift the brownies from pan and cut into squares. Remove brownies from foil. Store in an airtight container in refrigerator for up to 1 week. May be frozen.
